Flavor & cooking character
This za'atar-style companion is a seasoning, not a complete falafel mix. Sesame and herbs make it useful at the table as well as in cooking. Use a light coating and preserve some of the texture by adding part at the end.
What to cook
Homemade falafel, hummus, labneh, flatbread, roasted vegetables, potatoes and chickpeas.
How much to use & when to add it
1/2 teaspoon per serving to begin.
Blend into your own chickpea mixture or use as a finishing sprinkle over mezze-style foods.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Spoon yogurt into a bowl and top with warm chickpeas, cucumber and tomato. Add 1/2 teaspoon companion seasoning per serving and a little olive oil. Taste before adding lemon, then serve with bread or cooked falafel.
