Lebanese Seven Spice

Peppery and aromatic with allspice, cinnamon, cumin and subtle clove-cardamom warmth.

Seven-spice blends vary, so the name should not be treated as a universal ingredient formula. The warm, peppery direction works well with browned onions and savory fillings. Keep an acidic garnish separate so each bite has contrast rather than one uniformly rich flavor.

Rice, lentils, kibbeh-style dishes, ground meats, roasted vegetables, chickpeas and tomato-based meals.

1 teaspoon per two servings to begin.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Warm 2 cups cooked lentils with sautéed onion, 1 teaspoon blend and a little water. Spoon into pita with chopped tomato, parsley and yogurt sauce. Add lemon after tasting the filling and keep any extra spice to a small pinch.
