A Japanese barbecue-style dry seasoning needs a moist carrier if you want a glossy glaze. Taste before adding soy sauce, since the blend may already provide a savory, salty layer. Use a light coating so sesame and ginger remain noticeable.

1 teaspoon per pound of food.
