A dried Italian-style herb mix gives a quick aromatic foundation, but it needs moisture to soften. Add it during a sauce's simmer rather than leaving a thick dry layer on top. Fresh herbs can be a final contrast instead of a direct replacement.
What to cook
Tomato sauce, pizza, pasta, chicken, roasted vegetables, potatoes, focaccia, garlic bread, soups, beans and vinaigrettes.
How much to use & when to add it
1 teaspoon per 2 cups of sauce to begin.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Italian tomato lentils
Simmer a can of chopped tomatoes with olive oil and 1 teaspoon seasoning. Fold in 2 cups cooked lentils and warm through. Taste for salt and finish with a little lemon zest or parsley before serving with bread.
