Flavor & cooking character
Sweet, spicy, smoky, salty and citrusy.
Honey and fruity pepper create a sweet-hot finish that suits browned vegetables as well as grilled proteins. Protect the sugar from intense direct heat. A sharp slaw or lemony yogurt sauce helps keep the sweetness from dominating the plate.
What to cook
Seafood, poultry, pork, vegetables, hummus, lentils, kebabs, compound butter and roasted cauliflower.
How much to use & when to add it
1/2–1 teaspoon per pound of food.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Honey Aleppo cauliflower
Toss 1 pound cauliflower with oil and 1 teaspoon seasoning. Roast at 400°F until tender and browned, turning as needed. Serve over yogurt with chopped parsley and lemon to taste.
