Turmeric contributes earthy flavor and strong yellow color, so more is not automatically better. If a dish looks golden but tastes flat, adjust salt, acid or aromatics instead of adding enough turmeric to make it bitter.
What to cook
Curries, lentils, rice, soups, roasted vegetables, eggs, marinades, pickles and homemade spice blends.
How much to use & when to add it
Start with 1/4 teaspoon per cup of dry rice or 1/2 teaspoon for a four-serving stew.
Cook with moisture and a little fat; disperse thoroughly rather than leaving a mound of powder.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Golden rice
Warm 1 teaspoon oil in a saucepan, stir in 1/4 teaspoon turmeric and 1 cup rinsed rice, then add the rice's normal cooking liquid. Cook according to the rice directions. Rest, fluff, and finish with lemon and peas if desired.
Culinary background
Turmeric powder is made from a rhizome, the underground stem of the plant. It contributes a distinctive yellow color as well as earthy flavor; adding enough for color and adding enough for a dominant taste are different decisions.
