Dry ginger has concentrated warmth and behaves differently from juicy fresh ginger. It is useful when you do not want added moisture, but it cannot reproduce the crisp texture of freshly grated ginger.
What to cook
Curries, stir-fries, chai, gingerbread, cookies, marinades, roasted vegetables and homemade spice blends.
How much to use & when to add it
Start with 1/4 teaspoon per cup of sauce or fruit; use the recipe quantity for baked goods.
