The flakes contribute texture and fruity pepper flavor as well as heat. A kimchi recipe needs the specified ingredient balance and fermentation method; a seasoning suggestion is not a replacement for a tested fermentation recipe.

Kimchi, cucumbers, tofu, eggs, noodles, grilled vegetables, wings and Korean-inspired sauces.
How much to use & when to add it
Start with 1/2 teaspoon per cup of sauce or 1 teaspoon per pound of vegetables.
Let the flakes hydrate in a moist mixture; taste before adding a second source of chile heat.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Gochugaru cucumber side
Toss a sliced cucumber with 1/2 teaspoon gochugaru, 1 teaspoon rice vinegar and a little salt and sugar to taste. Let stand briefly, then serve promptly with rice. Add sesame only if suitable for your guests.
