Gingerbread spice gives warmth but does not supply the sugar, fat or leavening of a gingerbread recipe. In a simple fruit dish, start small and judge the ginger's peppery finish. Lemon or orange can lighten the deeper clove and baking-spice notes.

How much to use & when to add it
1/2 teaspoon per two medium pears.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Gingerbread pears
Simmer two chopped pears with a little water and 1/2 teaspoon spice until tender. Taste before sweetening. Spoon over oats or yogurt and finish with orange zest; use a smaller pinch for a more delicate fruit.
