Dried mint has a deeper herbal character than fresh mint and is useful in savory cooking. Start lightly in drinks: it can become woody or bitter if a heavily dosed infusion is left too long.
What to cook
Mantı, yogurt sauces, falafel, lamb, salads, grains, tea, vegetables and herb blends.
How much to use & when to add it
Start with 1/4 teaspoon per 1/2 cup yogurt or 1/2 teaspoon per cup of cooked lentils.
Rub gently to break up larger pieces, then hydrate in a dressing or add near the end of cooking.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Mint lentil salad
Toss 1 cup cooled cooked lentils with 1 tablespoon olive oil, 1 teaspoon lemon juice and 1/2 teaspoon dried mint. Add chopped cucumber and scallion. Rest briefly before tasting so the herb has time to soften.
