Flavor & cooking character

Dill weed is the leafy herb, with a lighter green character than dill seed. Long boiling can mute that freshness, so a late addition works especially well in creamy sauces and finished vegetables.

What to cook

Potatoes, cucumbers, fish, dips, ranch, popcorn, soups and pickled flavors.

How much to use & when to add it

Start with 1/2 teaspoon per cup of dip or 1 teaspoon per pound of potatoes.

Crush lightly between dry fingertips and let it hydrate in a moist dish; reserve a little for the finish.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Kitchen idea: Dill cucumber yogurt

Mix 1/2 teaspoon dill into 1/2 cup yogurt. Fold in 1/2 cup chopped, drained cucumber and a squeeze of lemon. Rest chilled for 10 minutes, then taste for salt. Serve with warm potatoes or a grain bowl.
