Flavor & cooking character

Licorice-like star anise and fennel up front, warm cinnamon and clove through the middle, followed by the citrusy, gently numbing character associated with Sichuan pepper.

Five-spice is potent and aromatic, especially beside sweet ingredients. A small dose can season a whole dish; a large one can make the licorice and clove notes dominate. Use it as a background warmth first, then adjust deliberately.

What to cook

How much to use & when to add it

1/4 teaspoon per pound of food to begin.
