Chili Lime Seasoning

Tart, zesty and earthy with fruity chile heat.

Chile and lime work particularly well on sweet corn, fruit and crisp vegetables. A very dry surface may shed the powder, while a drenched surface can make the seasoning uneven. Use just enough moisture or fat to carry a light coating.

Fruit, corn, beef, chicken, pork, seafood, ceviche, vegetables, salsas, guacamole, marinades, sauces, chips and popcorn.

1/2 teaspoon per cup of food.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Warm 1 cup corn in a skillet with 1 teaspoon oil. Add 1/2 teaspoon seasoning and toss well. Finish with chopped cilantro, then taste before adding fresh lime or salt. Serve alongside beans or spoon into tacos.
