This is the crab-shack style: celery seed and bay lead, mustard and paprika fill in, and small amounts of allspice, ginger, clove and mace give the familiar warm finish. It is moderately salted, so taste before adding more salt. Use part in the cooking and save a little to sprinkle on at the table.
What to cook
Steamed shrimp and crab, crab cakes, fish fillets, chowder, corn on the cob, potatoes, fries, chicken wings and deviled eggs.
How much to use & when to add it
1 teaspoon per pound of seafood, chicken or potatoes. For steamed shrimp, use 1 tablespoon per pound, split between the steaming liquid and a final sprinkle.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen recipe: Chesapeake steamed shrimp
Serves 4 as a main or 8 as a starter. You need 2 pounds large shell-on shrimp, 1 cup water, 1 cup cider vinegar, 2 tablespoons Chesapeake Bay Seasoning, 4 tablespoons melted butter and 1 lemon cut into wedges.
Pour the water and vinegar into a large pot fitted with a steamer basket, stir in 1 tablespoon seasoning and bring to a boil over high heat. Add the shrimp to the basket in an even layer, cover tightly and steam 5 to 7 minutes, stirring once halfway, until the shells are pink and the flesh is opaque all the way through (145°F). Tip the shrimp into a large bowl, sprinkle with the remaining 1 tablespoon seasoning and toss well. Serve hot with the melted butter, lemon wedges and extra seasoning on the side.
