Carolina Mustard BBQ Wing Rub

Mustard-forward, savory, lightly sweet and peppery with paprika and garlic.

This mustard-led wing rub is useful when you want tang without a heavy cheese coating. Keep the wing or vegetable surface relatively dry during the main cook. A small finishing sauce can carry aroma without making the crisp coating soggy.

Wings, chicken thighs, pork, cauliflower, fries and roasted potatoes.

1 teaspoon per pound of food.

Apply before cooking for a seasoned crust or toss lightly over hot wings after cooking for stronger mustard impact.

Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.

Roast lightly oiled cauliflower florets until browned and tender. Toss 1 pound florets with 1 teaspoon rub mixed into a little warm water and oil. Serve promptly with slaw, tasting before adding extra mustard or vinegar.
