Flavor & cooking character
Herbaceous with subtle heat and a gentle licorice note.
The herbs and seed spices can bring a breakfast-sausage impression to vegetables as well as meat. For actual sausage, use a complete fresh-sausage recipe and cook a small test portion before seasoning the entire batch; do not taste raw meat.
What to cook
Cased or loose sausage, ground meats, eggs, rice, soups, roasted vegetables, pasta sauces, dressings and marinades.
How much to use & when to add it
1 teaspoon per pound for a first flavor trial.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Savory breakfast potatoes
Sauté cooked diced potatoes and onion in oil until browned. Add 1 teaspoon seasoning per pound of potatoes with a splash of water, toss and heat through. Serve with cooked eggs or beans and a fresh tomato side.
Ingredients & allergens
Fennel, kosher salt, rosemary, black pepper, red pepper, sage, oregano, marjoram.
