Lemongrass and lime bring an aromatic top note that can fade in a long cook. Use a light coating during cooking and taste before adding a finishing pinch. A crunchy cucumber side gives relief from the chile without burying the fragrance in a heavy sauce.
What to cook
Wings, chicken, shrimp, tofu, mushrooms, corn and grilled vegetables.
How much to use & when to add it
1/2–1 teaspoon per pound of food.
Apply before roasting or grilling, or toss with hot cooked foods and a little oil. Finish with fresh lime for even more citrus lift.
Use this amount as a starting point for flavor, then adjust to your food and taste. If other ingredients bring salt, sweetness or heat, account for those before adding more seasoning.
Kitchen idea: Bangkok cauliflower bowl
Roast 1 pound cauliflower with oil and 1 teaspoon rub at 425°F until tender. Serve over rice with sliced cucumber and a little lime juice. Add a small finishing pinch of rub only if you want more aroma and warmth.
